You might enjoy visiting la Musée des Arts et Metiers, in Paris! The collection exhibits human innovation largely in the form of tools and technology, though I believe it starts a little later on in the scheme of things.

I think AI *could* be used to do all the labor and the stressful and boring work, and leave people more time to do action, but the only way it will is if the people who control the AI actually want to use it to that end. The capitalists that control the form AI takes and how it is used want to use it to increase shareholder value and make profit, and will only try to make the lives of workers easier if it ultimately increases profit.
